15 Minute Easy Kimchi Stew - Kimchi Jjigae

15 Minute Easy Kimchi Stew - Kimchi Jjigae

Ingredients

1 brown onion, roughly sliced

1 bunch shallots roughly sliced

500g pork belly, roughly chopped

1 pack silken tofu, cut into large cubes

500g kimchi, roughly chopped

1 tbsp oil

Water (amount will vary depending on volume on ingredients)

1 tsp beef stock

1 pinch pepper

1 tsp fish sauce

1 tsp soy sauce

1 tsp minced garlic

1 tbsp gochujang

Salt, to taste

Method

  1. In a large pot, heat the oil over medium heat and add the pork belly. Cook until the meat starts to colour.

  2. Mix the fish sauce, soy sauce, minced garlic and gochujang in a small bowl.

  3. Add the kimchi and sauce mixture to the pot. Cook for a few minutes until the kimchi is wilted.

  4. Add onion and shallots to the pot.

  5. Pour in enough water to generously covers all the ingredients, and sprinkle with beef stock and pepper. Stir to combine and then cover pot with lid. Simmer for 10 minutes. 

  6. Remove lid and add tofu, mixing gently until the tofu is warmed through. Season with salt to taste, and serve with rice.

Notes

  • You can replace pork belly with other meat, including pork mince, shoulder or even beef or chicken. Something with a decent amount of fat content is best to give flavour and depth to the soup. 

  • The amount of water will change depending on the volume of ingredients in the pot. The more water, the thinner the soup will be. 

  • You can simmer the stew for longer than 10 minutes - in fact, the longer the better!
