Beef Bolognese Pasta Bake

Ingredients (serves 4)
1 carrot
1 tomato
1 packet penne pasta
500g beef mince
Garlic seasoning
All purpose seasoning
500g Passata
Shaved parmesan
brown sugar
olive oil
butter
Method
Bring a large saucepan of salted water to the boil.
Grate carrot. Roughly chop tomato.
Cook penne in boiling water until ‘al dente’, approximately 10 mins.
Reserve some pasta water (1/4 cup for 2P / 1/2 cup for 4P) then drain and return to pan.
Meanwhile, heat a drizzle of olive oil in a large frying pan over high heat.
Cook beef mince, carrot and tomato until just browned, 4-5 mins. Drain excess oil. Stir in garlic seasoning and all-purpose seasoning and cook until fragrant, 1 min.
Stir in passata, reserved pasta water, the brown sugar and butter. Cook until reduced, 2-3 mins. Season generously with salt and pepper.
Preheat grill to medium-high.
Transfer cooked pasta to frying pan with sauce and stir to combine. Transfer to baking dish.
Crumble Parmesan over the top.
Grill until cheese has melted, 5-8 mins.
Divide pasta bake between bowls.
