Spam Musubi Muffins
Ingredients
340g can spam (we use salt reduced)
125g cream cheese (we use low fat)
1.5 cups of sushi rice
1/2 cup water
4 tsp light soy sauce
2 tbsp brown sugar
1 Spring onion, chopped for garnish
Sesame seeds, for garnish
Spray oil, for cooking
Method
Preheat oven to 200 degrees fan forced. Cook rice as per instructions and set aside.
Dice the spam into small cubes, around 1cm in size. Fry the spam with a little oil in a pan until caramelised. Add water, soy sauce and brown sugar into the pan with the spam and reduce until the sauce thickens and coats the spam.
Grease a 12 hole muffin pan with spray oil. Spoon a heaped tablespoon of rice into each muffin hole and use your fingers or a glass to compress the rice and make a well in the middle.
To each rice cup, add in a spoon of cream cheese, spam, spring onions and sesame seeds.
Bake for 15 mins, leave to cool/set for 5 mins then dig in!
